Training
for Emergency Food Provider Volunteer Chefs: This activity
arises from one Health Ambassador's growing disquiet about the
nutritional quality of the food distributed by her emergency
food provider program. After taking an informal poll and discovering
that 40% of the clients present were diabetics, she resolved
to shift the menu to healthier fare, in hopes of preventing
more serious disease and ill-health in the local homeless and
at-risk population. This activity trained the kitchen's volunteer
cooks in healthier recipes and healthier alternatives to the
standard fare.
